Olio Sardegna , from Ittiri, Sardinia, Italy, is a modern olive oil company that adopts all the best and most innovative systems of oil production, making the most of the extraordinary tendency of the area towards the olive trees growing for the production of high quality olive oil.
Ittiri is a large agricultural village with more than 9000 inhabitants, situated at 18 kilometres from Sassari in the north-west part of Sardinia.

Ittiri is situated on a hill at approximately 400 meters above sea-level; thanks to the extension of the territory cultivated with olive orchards, and to its typical cultivar Bosana variety, the area is considered an important olive-growing site.
The reason of the development of the olive-growing in this area is a balanced micro-climate that makes the oil produced in Ittiri distinctive for its intense, dense flavour, typical of such an uncontaminated land like Sardinia.

OIL MAKING

The olive crushing is carried out in our oil mill with a pre-olive press and a hammer mill equipped with several hammers and blades.
This method prevents the pulp from being overheated, through a computerised checking system of the rotations and through a mitigation of the olive crushing, thanks to the pre-olive press that softens the olives before the real olive crushing.

Olio Sardegna has carried out careful studies that have considered the best methods of oil extraction adopted by the most important manufacturers of oil mills in the world; after being uninterruptedly engaged in the search for an extracting method that does not alter the high quality of our olives, we have discovered the method called Sinolea that allows us to extract the oil through a natural dripping at room temperature.

This process consists of letting the pulp into a special olive crusher provided with thousands of steel blades that, slowly plunging with a reciprocating motion into the pulp, make it drip without pressing it and most of all without adding any water.

We are all aware of the fact that oil is a very delicate product and in order to keep it at best we must protect it from its main enemies: temperature, oxygen and light.
So as to protect our oil from the hot Sardinian summers, or from possible temperature ranges, we have a large air-conditioned room where we keep our tanks at a temperature between 13°C and 15°C through a nitrogen system that prevents the oil from coming into contact with the oxygen.
